This might be the single most refreshing dip I have ever had. It goes with pretty much everything, no one doesn't like it. It is also darn healthy. Don't wait before you make it, make it tonight--whether you are hosting pals for cheese and wine, grilling chicken, roasting seafood, making steak, or simply sautéing veggies, (or try topping your starches) this will send your eating experience to the moon.
1 cup Greek or regular plain yogurt
1 cup grated English cucumber
1 tsp. chopped garlic
8 mint leaves, chopped finely
salt and pepper to taste
Stir everything together and serve. Can be stored covered in the refrigerator for five days.
